BodyByHER Kale Sauce                   Printable version

Ingredients ~

6 Cups Chopped Kale                         1 Small Sweet Onion, Chopped
2 tsp. Chopped Garlic                          1/4 Cup Olive Oil
1 oz. Goat Cheese                                Salt, Pepper, Cayenne to Taste
Lemon Juice to Taste

Directions ~

Boil onion, garlic and kale in 4 cups of water for about 8 minutes.  Strain onion, garlic and kale from water and add to blender.
Do not throw away water. Add goat cheese, olive oil, salt, pepper and cayenne. Blend.
Add lemon juice and depending on consistency add a tad bit of the water that veggies were boiled in.

Serve Kale Sauce on top of Quinoa or Pasta that is cooked in the saved water. 
If you like, you can add more cayenne and cheese on top of the Kale Sauce before serving!  YUM!
