Ingredients ~

1 Tbsp. Olive Oil                                               1 Sm. Yellow Onion Chopped
3 Tbsp. Fresh Ginger, Chopped                   1/2 tsp. Chili Flakes
1 tsp. Mustard Seed                                         Pinch or More Cayenne to taste
2 tsp. Cumin                                                     1/2 tsp. Turmeric
1 Small Tomato, Chopped                             1 Red Bell Pepper, chopped
1/2 Cup Lentils                                                 4 Cups Veg. or Chicken Broth

Directions ~

In a large pot, sauté onion in olive oil on medium heat until light golden brown. Add ginger and remaining spices. Cook for 2 minutes.
Add tomato, red pepper, lentils and broth. Bring to a boil. Simmer until lentils are tender (about 25 minutes).

Top with plain Greek yogurt or cottage cheese.
